- 2 tbsp butter/marg
- 2-3 tbsp plain flour
- 550ml/1 pint hot milk
- 1 egg yolk, optional
- Pinch of grated nutmeg
- 50-100g (2-4oz) grated 'tasty' cheese (strong cheddar, vegetarian Parmesan etc)
Slowly stir in the hot milk, stirring or whisking all the time.
Bring to the boil and simmer until thick.
Add the grated cheese, stir well and then remove from the heat.
Finally stir in the egg yolk, if using. Pin It
